I decided to invest in a Cuisinart ice cream maker and it was the best decision I ever made. Now I can make all different kinds of flavors, and adjust accordingly to my taste. This batch, I thought I would experiment with pumpkin and attempt to make a pumpkin pie ice cream. I absolutely love pumpkin, especially during the Fall, as it is high in Vitamin A and high in Fiber, not to mention I love the taste with cinnamon, nutmeg, and cloves. The ice cream turned out well and it was not too sweet, and it would be perfect served with a piece of homemade pumpkin pie!!
2 cans coconut milk
1 can pumpkin
1/2 - 1 cup coconut sugar
1 tsp vanilla extract
1 tsp cinnamon
1 tsp cloves
1 tsp nutmeg
Pinch of sea salt
*Adjust spices to taste. I did not have pumpkin pie spice, but highly recommended for a pumpkin pie flavor.
Combine ingredients and mix by hand or in blender.
Pour mixture into ice cream machine and turn on.
Mix for at least 20 mins or until ice cream is formed.
Best served immediately, if stored in freezer, place back into ice cream maker to make smooth and creamy again.
